Ireland is home to an abundance of remarkable producers, and from the beginning, I wanted to bring as many of them into Mae as possible. The restaurant is built on relationships with a wide network of farmers, cheesemakers, fishers, and artisans whose dedication to quality and craft is second to none. From Glenmar Shellfish and Goatsbridge Trout Farm to Durrus, Milleens, Cashel Blue, and Gubbeen Smokehouse, we proudly showcase some of the best produce Ireland has to offer.
